The Celeries


The tender leaves of the celery you grow or buy can be used fresh or dried in almost all foods.

Celery salt is a powdered form combined with salt.

The seeds sold for flavoring are not those of the plant we grow, but those of smallage or wild celery. These seeds, either whole or ground, have a powerful flavor and must be used sparingly; whole in stocks, court bouillon, pickles, seafood, or vegetables.

Apium graveolens needs richmoist soil and hilling to blanch.
