BurnetSometimes called salad burnet; in fact, Italians say that salad without burnet is like love without a woman. This herb has a haunting cucumerish flavor. It does not dry well, but it keeps green all winter long and can be plucked at any time. Pick the center leaves; the older ones are bitter. Use the leaves, or soak the seeds in vinegar for use in salads.
